Peach Crisp

Peach Crisp with (no sugar )

One of my favorite desserts of all time is peach cobbler with vanilla ice cream. It is one of those things that if offered, it is hard to turn down. My mouth is literally watering right now just thinking about it! So, on July 4th, I went in search of a healthy alternative to the peach cobbler and found this oh so healthy "peach crisp". And let me tell you this...it was so GOOD!

Ingredients:

1 16 oz package of fresh frozen peaches

1 cup of almond meal

1/2 cup of old-fashioned oats

3 tbsp. stevia (15 packets)

1/2 tsp cinnamon

1/4 tsp salt

1/2 cup coarsely chopped walnuts

2 tbsp. maple syrup (I used the light version)

3 tbsp. coconut oil (be sure NOT to melt)

Instructions:

1. Preheat oven to 350 F

2. Spray 11x7 baking dish with cooking spray. Put the frozen peaches in the dish

3. In a medium bowl, combine the meal, oats, stevia, cinnamon, and salt. Stir to combine. Stir in walnuts. Add the syrup and coconut oil. Use fingers to mix until moist yet crumbly.

4. Sprinkle mixture evenly over peaches and bake for about 35 minutes.

5. Remove from oven and let cool.

6. Serve warm with no sugar added Vanilla Ice Cream (our favorite is Bryers)
