Easy Cheesy Penne Pasta

Here is a healthier take on a popular dish that most everyone loves...spaghetti! It is super easy and is delicious. Don't be afraid to try different types of pasta. In this recipe, I am using the penne pasta that is made from brown rice and quinoa. I must admit that the first time I cooked this pasta, I was thinking I may not like it...but, I not only liked it, I loved it in this dish paired with browned ground turkey and marinara sauce. It is also good in parmesan chicken. I hope you enjoy this healthy recipe as much as my husband and I did.

Ingredients:

1 lb ground turkey

1 medium onion chopped

1 jar organic marinara sauce

1/2 -2/3 bag of organic brown rice and quinoa penne pasta

1 cup shredded low moisture part skim mozzarella cheese

1/4 cup shredded parmesan cheese

salt and pepper to taste

Instructions:

Spray your pot with coconut cooking spray. Brown the ground turkey with salt and pepper and the onion together. While that is cooking bring a pot of water with 1/2 tsp of salt in it to a boil...add the penne pasta. Boil the pasta until tender. Drain. Add the marinara sauce to the meat and heat up. When heated, add the pasta. Cook together on low to medium heat for around 5 minutes. Stirring frequently. Cover with both cheeses and cover until melted. Serve.
