Sassy Salsa Scrambled Chicken n Eggs

Okay...so I have this left over grilled chicken...what to do with it? It's Saturday morning and I love having a relaxed breakfast with my partner in crime...Bobby (better known as my husband). So thankful to have someone to taste test my recipes and give an honest opinion. The thing is, I have not found too much that he hasn't liked...he loves to eat good food. Now back to the recipe at hand...left over chicken and eggs.

Ingredients:

1 Tsp Coconut Oil

1/3 - 1/2 cup onion chopped

1 cup chopped up cooked chicken (I used left over grilled)

4 eggs

1-2 Tsp water

3 Tsp Salsa

Salt and Pepper (to your taste)

Hot Sauce to taste (optional)

Side:

1 Sandwich Skinny to have with finished product

We just discovered these from Aldi's...they are AWESOME! Great for those hamburgers or tomato sandwiches instead of using bread. Today we use it as toast with our eggs.

Instructions:

Melt coconut oil in large frying pan. Fry chopped onion in oil for couple of minutes and add chicken. While that is cooking break eggs in a bowl and using fork whisk eggs and add water and salt n pepper and continue to whisk until mixed well. Pour over the onion and chicken...continue stirring until fluffy and add the salsa...heat through. Add optional hot sauce to the heat you prefer.
