Fresh Walnut Chicken Salad

This is my all time favorite. Even if I wasn't trying to eat healthy, I truly believe it would still be my favorite. It is not just chicken salad, it is walnut chicken salad with grapes. Oh my goodness, can it get any better than that? Remember, it is not your grandma's chicken salad! It has walnuts in it for Pete's sake LOL. I think if you give it a try, you will love it as much as I do.

Ingredients:

4 boiled eggs

3 large chicken breasts

2 stalks celery chopped

3/4 cups of quartered red grapes

3/4 cups coarsely chopped walnuts

1/2 - 3/4 (or more) mayo

Directions:

Boil your chicken in salted water until white all the way through. If you need, to cut them into smaller pieces about half way through your cooking time, to make sure cooked well.

Bring eggs to a boil and set your timer for 10 minutes. Boil your eggs for 10 minutes and remove from heat. (anytime I boil eggs for a recipe, I always boil a few more to have later)

Boiling your eggs for 10 minutes will give you a perfect boiled egg. After they are done, cover with cold water to make them easier to hold and peel. Peeling them under running water also makes this chore easier.

Cut up boiled chicken into cubes and put in a big boil. Cut up 4 boiled eggs and add. Add grapes,

celery and walnuts.

Look at all of those colors...I could eat it just like that...but we are not quite finished.

Add the mayo and stir well. Add the amount of mayo that you prefer...we like a lot. You can eat this alone or with your favorite cracker. We love the woven cracked pepper crackers with ours...or on a "skinny minny" roll. Serve with some veggie chips and humus and you've got yourself a meal. (Make a double batch and have it all week if you like it. I'm having some for lunch today...yum)
