I had some turkey burgers in the freezer, but didn't want to just make turkey burgers and put them on a bun. I decided that I could make them with some onion and marinara sauce and add some surprises to make a one of a kind dish! It is obviously pretty healthy using healthier ingredients.

Ingredients:

4 frozen turkey burgers (thawed 30 seconds in microwave)

2 slices of white onion separated into rings

1 1/2 Tablespoon Coconut Oil

1 jar Marinara Sauce

Brown Rice Spaghetti

Mexican Cheese

Mozzarella Cheese

12 turkey pepperonis

salt, pepper and garlic powder to taste

Instructions:

Over medium heat, Melt the coconut oil in a non stick pan and put the burgers in the oil. As that side is cooking, put the separated onion rings on top of the burgers. Carefully flip the burgers so that the onion is now on bottom as seen in the picture. Cook for a couple of minutes or so and flip back over making sure the onion is now on the top. Turn the heat down a notch and boil spaghetti in the salted water with a tsp of coconut oil in there to keep from sticking together. Place 3 turkey pepperoni slices on top of the onion.

Pour the sauce around the burgers then on top. Cook on low for a few minutes then add a nice handful of Mexican cheese followed by a handful of Mozzarella cheese. Simmer until cheese is melted. Put some cooked spaghetti on plate and place one burger over the spaghetti with added sauce to cover...yummy!
