Healthy Breakfast Coming Your Way...

I was craving good ole fashioned pancakes this morning and when I opened the cupboard...there was my healthy pancake mix sitting right there on the shelf. With excitement, I took it from the shelf and realized it was very light. Oh no!!!!! I measured out the contents and there was only 1/2 cup in box. Now what?
Lightbulb moment: I wonder what would happen if I mixed in 1/2 cup of quinoa flour in with that 1/2 cup pancake mix? Well, ya'll...it not only worked...it was delicious. I forgot to take pictures of the finished product, but trust me...it was tasty.
Along with the pancakes, I fixed some hormone free chicken sausage links...again...tasty. I made over easy eggs fried in coconut oil for my hubby and a scrambled egg for me. A great healthy breakfast that would rival Cracker Barrel...but much better for your cholesterol. :-)
